Slice of grilled beef sirloin in Vittoria Alata cheese panur
INGREDIENTS
FOR THE STEAK
500 g sirloin steak well marbled
DRESSIG FOR VITTORIA ALATA AND TURMERIC MIX
150 g grated Vittoria Alata cheese
150 g extra virgin olive oil
50 g balsamic vinegar
80 g sour cream or kefir
Turmeric
FOR THE VITTORIA ALATA PANUR, SICILIAN STYLE
100 g taralli breadcrumbs
150 g grated Vittoria Alata cheese
30 g of crushed cherry tomatoes confit
10 g dried onion
Q.s. of orange and lemon peel
Q.s. of chilli powder
Thyme leaves
Salt and pepper
PREPARATION
FOR THE STEAK
Cut slices of sirloin steak.
DRESSIG FOR VICTORIA ALATA AND TURMERIC MIX
Blend everything to a cream with a Robot Cook or immersion blender.
PER LA PANUR DI VITTORIA ALATA, ALLA SICILIANA
Blend everything together.
Wet the steak.
Sandwich with the Sicilian-style panur.
Compress well.
Heat the grill mark the steak (use a very thick grill or frying pan). Serve.
