Canederli with Vittoria Alata

INGREDIENTS

FOR FOR THE DUMPLINGS

250 g stale bread

120 g white flour

150 g whole eggs

250 g whole milk

150 g grated Vittoria Alata cheese

4 g salt



FOR THE SEASONING

120 g grated Vittoria Alata cheese

50 g butter

FOR THE AROMA
5 g chives

Parsley

Nutmeg

PREPARATION

FOR DUMPLINGS AND HERBS

Cut the bread into small cubes.

Wet it with the milk mixed with the eggs.

Add the finely chopped chives, chopped parsley, nutmeg and salt.

Let everything soften for about 30 minutes.

Add enough flour to make a mixture workable with your hands.

FOR THE SEASONING

Boil in boiling water for about 15 minutes.

Drain and arrange on a plate.

Season with grated Vittoria Alata cheese and melted butter.
