VITTORIA ALATA
Vittoria Alata cheese flanwith ginger pears and black pepper
INGREDIENTS
FOR THE VITTORIA ALATA CHEESE FLAN
150 g cream
150 g eggs
150 g of whole milk
50 g of grated Vittoria Alata cheese
q.s. of salt
FOR THE COMPOSITION OF THE DISH
Vittoria Alata cheese flakes
FOR THE GARNISH
2 g peppercorns
2 g ginger
600 g Williams pears
75 g butter
20 g apple vinegar
PREPARATION
FOR THE VITTORIA ALATA CHEESE FLAN
Boil the cream with milk and salt.
Pour into a bowl.
Add the eggs with the cheese.
Fill the buttered moulds.
Bake for 30 min in a bain-marie at 150°C.
COMPOSITION OF THE DISH
Place the flan in the centre of the plate with the pears around it.
Garnish with shavings of Vittoria Alata cheese.
FOR THE TOPPING
Peel the pears.
Remove the core.
Cut them into slices.
Cook with butter, ginger and black pepper.
Wet with apple vinegar.
